The second exploration of Riesling techniques came in 2017. We combined what we learned from our extended lees aging trial with a partial fermentation as whole clusters before pressing off to finish in tank. The influence of skins adds another textural dimension to the wine while the stems raise the PH, softening the edges of the acidity. Once again fermented dry, this wine spent 9 months on lees as well and was hand bottled with no sulphur.
Lanolin, apricot and white peach with light tannin and a textured, dry finish. This wine is fascinating and a pure and clean example of the orange wine (skin fermented white) style. This wine will likely continue to age well but being unfiltered and without any sulphur, it should be enjoyed in the near term.
